Mini Burgers - Who Don't Like?!

Ask any child if he / she likes burger and fries and most times, the answer is likely yes.

My boys like burgers and fries and at times, we make mini burgers at home, little enough for their hands to hold and healthy enough if they eat 2 or more.  Because as you would have guessed it, I hid vegetables in the patties - it is actually not a secret as they saw it but as long as the taste of the vegetables is not overpowering, they are fine with it.


The boys had a good time mixing and mashing the mixture.  At the same time, they learn about the food that they eat.




Mini Burgers with Hidden Vegetable
(12 little patties)

Ingredients:
1 carrot, grated
1 zucchini, grated
2 tbsp oat bran
400g minced beef
200g minced pork
Salt
Freshly cracked black pepper

12 mini bun, toasted
Lettuce 
Sliced cheese

Directions:
Ensure that the liquid from the carrot and zucchini is squeezed out.
Put carrot, zucchini and oat bran into a large bowl.  (For mini burgers, ensure that the vegetables are grated into very tiny pieces to prevent the burgers from falling apart when cooked.)
Add the pork and beef.  Season with salt and black pepper.
Mix and mash it all well with your hands.
Shape mixture into 12 mini patties.
Refrigerate for 30 minutes or more.
Heat oil in non-stick frying pan.  Fry mini burgers until cooked through.
Drain on kitchen paper.
Serve in mini buns with lettuce and sliced cheese.

Note:
The patties can be frozen uncooked, up to 3 months.  Defrost overnight in fridge.
